2 cups of low sodium chicken broth
1-2Tbsp of garlic powder, onion powder
1.5lbs chicken breast, fat trimmed
1 bunch of leaf lettuce, washed and cut into bite size pieces
1/2 cucumber diced
3 Tbsp salsa
drizzle of vinaigrette
Cook chicken with chicken broth and seasonings in slow cooker for 3 hours on high in such a way that these can be flaked easily when done.
Divide into portions, 4 servings per pound of chicken.
Put lettuce in bowls to make same amount of servings as chicken. Add cucumber, salsa and drizzle vinaigrette over.
